Breaking The 3 Minute Barrier. Not just pie in the sky!

A wood fired tasting gourmet pizza in under 3 minutes? A piping hot pizza in front of your customers faster than the round of drinks they just ordered?

Technology and taste have been brought together by two Brisbane based companies to achieve just this.

Andrew Morris from Spyral Pty Ltd explains. “Everyone loves fresh made gourmet pizza so we wanted to develop a new system that would benefit both the hotel sector wanting an easy way to introduce pizza to the menu, and the pizza shop owner wanting to increase their pizza sales at a low cost. Thanks to this new system, we now have customers selling only 20 pizzas a day, and adding over $21,000 per year to their bottom line.”

While Spyral supplies the technology, the taste portion of this system comes from the families behind the award winning bistro and pizzeria in Bulimba, Sugo mi. Their Sugo tu Prodotti arm of the business uses the traditional Italian methods of long, slow natural fermentation, with their perfected light, thick base with soft, fluffy crust three years in the making. A way of freezing the fresh dough discs was then developed without destroying those traditional qualities that make the world of difference to the taste.

Rob van den Bergh from Sugo tu Prodotti tells, “we are very proud of the fact that our products are preservative free and that we have retained the authentic Italian style taste in our frozen discs, which are ready to stretch and top in just 15 minutes.”

The simple toppings are the best

Rob gave us some examples of simple topping combinations that are easy to put together to achieve that gourmet taste. “You can’t go past the traditional ‘Margherita’ for simplicity with tomato sugo, bocconcini, basil and olive oil, but other simple combinations such as tomato sugo, prosciutto crudo, bocconcini, rocket and parmigiano-reggiano or thin sliced potato, pancetta, mozzarella, sweet grana padano and rosemary are also quick to put together.”

So, what about the cost?

“With a small capital outlay of under $20 per day (TAP), you only need to sell 3 pizzas a day to cover costs,” says Andrew Morris. “Plus, the beauty of this is that it’s a proven system, not just a separate pizza oven or pizza base dough. We’ve tested and re-tested with the Sugo tu dough discs and have taken out all the guess work. This is a really easy way for our customers to increase their food revenue.”
